What I'd Like

Karpenter has released v1.0.0: https://aws.amazon.com/blogs/containers/announcing-karpenter-1-0/

I would like the version of Karpenter used in this project to be updated to v1.0.0.

Part of this effort should be to find any potential breaking changes. The above blog post link speaks of changes coming in Karpenter v1.0.0.

Since we're installing Karpenter in a non-default namespace (recommended is kube-system) we will need to use the karpenter-crd chart to install the CRDs, which includes templating for the conversion section of the CRD. There's some more details in step 5 of the v1 migration guide.
