Bytes per chunk config should be GB (or MB) per chunk

Description

Today we accept a bytes-per-chunk config in the config file. This can make identifying small typos very difficult given the number of digits included (ie 15000000000 bytes).

These should be swapped to ideally GB (or MB) per chunk to make identification of small typos easier, and since these will primarily be configured in GB units.

Look into objects for encoding si suffixes into string values
