Inja transformation docs point to latest Inja despite our version being pinned to 2.1

Describe the requested changes

Our docs should indicate in some way to users which Inja version is supported. We currently link to the root repo in github, which will always point to the latest commit on the default branch. This is an issue since the latest version may support features which Gloo Edge will not support.
