Describe the bug
The Tethys documentation PDF has not been generated automatically for a while (last version is 2.1.7)

To Reproduce
Go to https://readthedocs.org/projects/tethys-platform/downloads/

Expected behavior
The PDF for the latest version should be in there.

Additional context
It would be good to have a PDF version of the Tethys Doc so it can be fed to LLMs easily.
