Remove ktorfit (#909)

**Background**

Ktorfit is unnecessary complexity that the project doesn't need. Since
Ktorfit switched to the compiler plugin it has become very difficult to
maintain

**Changes**

- Remove ktorfit and migrate to manual ktor usage
